Krupno je mljevena, a balzamični ocat iz sjevernotalijanske Modene daje joj neobično bogat miris, okus i boju. Ovaj senf proizveden je ručno i u malim količinama od odabranih sjemenki gorušice. Sjeme se prvo namače u mješavini octa i vode iz šuma koje okružuju samostan. Zatim se drobi na mlinskom kamenu i aromatizira medom i balzamičnim octom. Blago začinjeni senf ručno se puni u staklenke gdje tokom nekoliko sedmica zrenja poprima svoju nepogrešivu aromu po kojoj se bitno razlikuje od konkurentskih proizvoda.
Old French mustard is produced by hand according to the original recipe of monks from the Nový Dvůr monastery. It is coarsely ground, and balsamic vinegar from Modena in northern Italy gives it an unusually rich aroma, flavor and taste. This mustard is produced by hand, even in small quantities, from selected mustard seeds. The seeds are first soaked in a mixture of vinegar and water from the forest surrounding the monastery. After that they are then crushed on a millstone and flavored with honey and balsamic vinegar. The mildly spicy mustard is hand-picked in the bottle, where it needs several weeks of maturation to acquire its unmistakable aroma, which distinguishes it significantly from competing products.
